Ingredients
- 1kcal olive oil spray
- 70ml olive/coconut oil
- 150g honey
- 2 eggs
- 3 mashed banana
- 60ml milk
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/2 tsp salt
- 80g oats
- 200g wholemeal flour
Instructions
- Preheat oven to 175° Celsius.
- Grease a muffin tin with 1kcal olive oil spray.
- Whisk together 70ml olive/coconut oil, 150g honey, 2 eggs, 3 mashed banana & 60ml milk.
- Then whisk in 1/2 tsp cinnamon, 1 tsp vanilla extract, 1 tsp baking soda & 1/2 tsp salt.
- Finally mix in with a spoon 30g oats & 240g wholemeal flour.
- Spoon out into the 12 muffin cups and top with a sprinkle of oats.
- Bake in oven for 25 mins or until a skewer comes out clean.
