Ingredients
  1. 1kcal olive oil spray
  2. 70ml olive/coconut oil
  3. 150g honey
  4. 2 eggs
  5. 3 mashed banana
  6. 60ml milk
  7. 1/2 tsp cinnamon
  8. 1 tsp vanilla extract
  9. 1 tsp baking soda
  10. 1/2 tsp salt
  11. 80g oats
  12. 200g wholemeal flour
Instructions
  1. Preheat oven to 175° Celsius.
  2. Grease a muffin tin with 1kcal olive oil spray.
  3. Whisk together 70ml olive/coconut oil, 150g honey, 2 eggs, 3 mashed banana & 60ml milk.
  4. Then whisk in 1/2 tsp cinnamon, 1 tsp vanilla extract, 1 tsp baking soda & 1/2 tsp salt.
  5. Finally mix in with a spoon 30g oats & 240g wholemeal flour.
  6. Spoon out into the 12 muffin cups and top with a sprinkle of oats.
  7. Bake in oven for 25 mins or until a skewer comes out clean.
